The inner bark of Ceylon cinnamon is the source to get Cinnamon Zeylanicum. The well-known producers of Cinnamon Zeylanicum are Madagascar, Sri Lanka, and India. The only original Ceylon Cinnamon that is considered historically ‘true’, originates from Sri Lanka. Even though the other cinnamons are also from the same species, they are considered ‘not true’ and called cassia. Origin of Cinnamon Ceylon Powder
Cinnamon is considered very old and has been in use by Egyptians as early as 2000 BCE. The stems of the Cinnamon trees are cut and then processed by scraping off their outer bark. Because of that, the inner bark gets loose and then pried off in log rolls. After that, the rolls are being dried for quite a few hours then cut off into rolls around 10cm. These rolls are later ground into powder.

These quills are further dried in the oven or under the sun. When the quills are tanned enough, they are ready to be send all around the world.
